I have never been a pasta lover but …
This recipe from Roly’s Café & Bakery might just change my mind!
The ingredients
Add one hungry boy just home from school
Who doesn’t even wait for pasta to be cooked
400 ml of olive oil was supposed to be used and I promise I won’t take out my soap box, (haven’t time – hungry boy waiting to be fed), but I only used 45 ml olive oil, (measured it – three tablespoonfuls) and it was plenty. Chopped garlic followed by chopped chilli were cooked in the heated oil. Tomatoes were then added, seasoned and cooked until soft. I threw the pan in the oven. The recipe says cook for 30 minutes. I found it took only about 10 minutes.
Meanwhile I cooked the pasta. The pasta, tomatoes, rocket and basil were gently mixed and grated parmesan was sprinkled over.
20 minutes from starting
10 minutes later
Into the ‘definitely repeat’ category. Fast food for the win

That looks lovely! I love pasta in all its forms but it can be so heavy – this looks fantastically light! And anything with rocket in it = YUM!
Seriously – you’ve put like, all of my favourite things into one plate there! Yum!
Kirsty, As you say it was really light. I think it will become a work day staple because it was so quick and easy to make
Aoife, welcome to the blog. You say that the recipe contains all your favourite things on one plate
I’d add my favourite – a recipe that’s easy and quick to make
Made a quick and easy pasta dish myself this evening, when I got in from spending all afternoon at Limerick Regional. I love pasta for its simple, fuss free convenience. Meal prepared, cooked and on the table in 30 mins and it was delicious
I am not a great fan of Pasta, but this might convert me!
Great! Garlic, tomatoes and herbs…my kinda food.
I’ve got all the ingredients for this so I’ll give it a whirl in the next few days.
Thanks, Lily.
This looks really good Lily, and will be perfect for my “non onion eater”!
Really enjoying the blog,
agree with you, not a great fan of pasta, it gets very samey, but that looks like a lovely recipe, and it looked very tasty!
must jot down the idea on paper with a pen (remember those?) and try it at weekend!

It looks wonderful Lily, I am a pasta fan….although not eating it at the moment because I’m trying to lose weight (as always!)
Marie, I like your description ’simple, fuss free convenience’. That describes it well. I just wish I liked pasta more.
Grannymar, as I said that dish did it for me.
Steph, I’ll be interested to hear what you think.
Brownieville Girl, welcome to the blog and glad you’re enjoying it. I hadn’t noticed that the recipe didn’t contain onions. So many recipes do, I assume you just leave them out for your non-onion eater
Liz, yea it went down very well with the three of us. Interested to hear what you think also
Val, Fair play to you, you really are sticking with the diet
Nom! Nom! That’s what I think
It was delicious, thanks. I wasn’t sure what quantity of garlic and chilli to use so I played safe. Next time I do this recipe, I’ll up the ante!
Steph, I don’t post recipes because of copyright, maybe I’m too law abiding!
